Curing and Milling

After the Harvesting process, the coffee is taken to the mill where the parchment cover is removed either by passing it through a Huller (dry cherry beans) or a Peeler - polishes (washed coffees that are peeled). Here the silver skin is removed and the bean then takes the nomenclature 'GREEN BEAN'.
Both are then graded first for size and then density. Electronic colour sorting and hand garbling complete the curing process by rejecting defective beans.
